Celtic Honey Mead Cake
Ingredients
- 2 cups All-purpose flour
- 1/2 cup Irish Butter (softened)
- 3/4 cup Local Honey
- 2 Large Eggs
- 1 tsp Ground Cinnamon
- 1/2 cup Mead (or Apple Cider)
Instructions
- Preheat your oven to 180°C and grease a circular cake tin.
- Cream the butter and honey together until smooth and pale.
- Beat in the eggs one at a time, then fold in the flour and cinnamon.
- Gradually stir in the mead until the batter is consistent.
- Bake for 45 minutes or until a skewer comes out clean.
